Chimichurri Sauce

Chimichurri is an herb condiment mixture of cilantro, lemon, vinegar and spices. It considered a culinary specialty of Argentina. It is as natural a condiment for Argentine grilled meats as ketchup is for the American hamburger.

History

It is told that the unusual name comes from "Jimmy McCurry", an Irishman who is said to have first prepared the sauce. He was marching with the troops of General Jasson Ospina in the 19th Century, sympathetic to the cause of Argentine independence. The name "Jimmy McCurry" was difficult for the native people to pronounce so they called him Chimichurri.

Suggestions

Chimichurri can be placed on any meat product or anything you like. It teams well with grilled meat, fish, poultry, chicken, pasta, vegetables, etc.

Chimichurri sauce is also great as an appetizer, served with crackers or chunks of crusty bread that can be dipped into the sauce.

Any good steak can stand alone, but the flavor combination of grilled beef and Chimichurri is awesome! When marinating, the easiest way is to generously cover your dish the evening before.
